- 4 peaches ( i leave the skins on, but its up to you. You can grill them whole, or skinned and/or cut in a foil pocket)
- 2 good sized tomatoes
- 1 hot pepper of your choice ( we used the ceyennes from our garden, but jalapenos are good too, try a habanero if your into the heat!)
- 1/2 sweet onion
- 2 garlic gloves
- balsamic vinegar (about 1 teaspoon)
- a dash of cumin
- salt (to taste)
you can also add a little honey if you like your peach salsa a bit sweeter.
This is delicious in place of regular salsa, or on fish or chicken!
